Korean BBQ Pork Wraps with Slaw

This post will actually give you two dinner ideas. I used the original recipe and made as Creme de la Crumb suggests as tacos. But this makes a lot and we had leftovers. No worries, make into a quick wrap for a portable lunch or a quick week night dinner.

As a rule, I try to eat super healthy during the week. You will see this recipe has salty and sugary components in the meal and mayo in the slaw. However, when we get several servings out of the recipe, I don’t feel too bad eating a small portion. Load up on veggies – you can add shredded carrots, onion, cilantro, fresh cabbage or whatever to the wrap to bulk it up and cut back on the meat. Serve alongside some steamed veggies for a well-balanced meal. I had my wrap in a Joseph’s Lavash wrap that is only 100 calories for a big one. They sell these at Krause’s now in the cheese/hummus/sushi case so definitely buy them if you are local.

These hit all the notes – warmed up sweet and slightly spicy pork, cold and crunchy slaw, soft lavash bread and nice, fiber-filled veggies. Enjoy!
