This is a little different meal than we usually have. I feel like this is a little more fancy compared to the usual meat, potatoes and veggie dinners we eat. I really enjoyed this meal! We have a slightly toasted pita, a thin layer of Sriracha/mustard dressing, gooey Brie cheese, salty bacon, sweet honey, crunchy peanuts and bright green onions. All those flavors are enough to make your mouth really happy.
Brie cheese is fantastic here as it pairs so well with the honey and melts wonderfully. You could certainly use another cheese if you wish though.
Bacon, Brie and honey flatbread, serves 3
- 3 pitas or flatbreads
- 2 T. yellow mustard
- 2 T. Sriracha sauce
- 1/3 lb. venison bacon, pork or turkey bacon would also work
- 3 oz. brie cheese, sliced thin
- 3 T. honey
- 1/4 cup honey roasted peanuts
- green onions, sliced for garnish
Cook bacon until crispy. Drain off any extra fat. Chop into bite sized pieces.
Turn on broiler and toast pitas until slightly browned and firm enough to withstand toppings.
Mix together the mustard and Sriracha. Spread it evenly on the 3 pitas.
Top the pitas evenly with bacon, 1 oz. each cheese and 1 T. honey.
Place flatbreads on baking sheet and broil until cheese is melted, 2 or 3 minutes.
Top pitas evenly with peanuts and green onions and serve.
You can see that my pitas have been slightly crisped up already so they can hold the toppings. You just want to pop this under the broiler to melt the cheese which will happen quickly. Don’t go far!
Top with peanuts and green onions and eat. This is a great meal for something different and you can’t really go wrong when you serve bacon and cheese. Enjoy!
