I wanted to share a quick idea for a healthy snack under 250 calories. I always try to keep chopped veggies on hand so this came together in no time.
Healthy Mediterranean Rice Cake Snack
- 1 rice cake (35 calories)
- 2 Tbsp. chipotle hummus (50 calories)
- 1 Tbsp. feta (about 50 calories depending on your type)
- Sprinkle of chopped tomato, onion and cucumber
- Drizzle of balsamic vinegar
Layer your rice cake in order. Eat and be happy! To add more protein, chopped chicken or turkey breast is great on here as well. Rice cakes have been known to be boring, but top them with these goodies and it is the perfect vehicle to get good food into your mouth!
