Pizza. One of everyone’s favorite foods! I wanted to try something different than my usual faves and came up with an Asian sort of style pizza.
This is a great weeknight meal you won’t have to feel guilty about.
Asian Chicken Pizza, adapted from Stephanie Cooks
1 prepared pizza dough or crust (I like a thin crust)
3/4 – 1 lb. chicken, cooked and cubed
1 tsp. red pepper flakes (less or more depending on how hot you want it)
6 cloves garlic, minced
1/4 cup low-sodium soy sauce
2 tbsp. honey
1/2 cup rice wine vinegar
1/4 cup water
1 cup mozzarella cheese
1/2 red pepper, sliced
1/2 red onion, sliced
12 or so stalks of asparagus, sliced into 1-inch pieces
Sesame seeds (optional)
2 tbsp. sliced green onion
1- Preheat the oven to 450.
2- Combine the red pepper flakes, garlic, soy sauce, honey, water and vinegar. Stir well, and add to warm skillet on medium / medium high.
3- Heat the sauce until it boils and thickens like a syrup, at least 10 minutes.
4- Add the chicken, toss well.
5- Get your dough or pizza crust ready.
6- Top with the chicken using a slotted spoon. Add peppers, red onions, asparagus and cheese. Drizzle the top with the glaze mixture. The glaze should be very thick.
7- Top with sesame seed and green onion.
8- Bake 10-12 minutes. Serve hot.
This is the crust we used and this is available at Krause’s. I really liked it. I do usually bake my crust for a few minutes to firm it up for the toppings as this is packed with veggies and chicken.
This sauce will make your kitchen smell real good!
The pizza is ready in 10-12 minutes, depending on how crisp you like it.
Of course you could leave off the peppers, onions or asparagus if they aren’t to your liking.
