Breakfast skillet with over easy eggs

Sunday breakfast is one of my favorite parts of every week. Generally this is the only day I can sleep in, relax or do whatever I want. Usually I want to start my day with a big, homemade breakfast.


This is a simple skillet using a shortcut. I have been using the Green Giant microwaveable potatoes on occasion. They are easy, an OK ingredient/nutrition list, go on sale often and are very convenient. On the photo above you might not be able to tell but I used the potatoes in a chile sauce and just used some of the butter in that package to fry the eggs to get the spicy eggs covering the potatoes. The package contains a few small potatoes and some chunks of seasoned butter (I have seen about 3 different flavors). You can microwave the whole thing in just minutes.


Breakfast skillet with Green Giant microwaved potatoes – serves 2-3

  • 1 package of Green Giant microwavable potatoes (fully microwaved and cooled – each package is about 3 servings but the 2 of us can eat the whole thing for breakfast usually, or the leftovers are also good)
  • Peppers, onion, garlic, ham, etc. Whatever accompaniments you like with your breakfast potatoes
  • 2 eggs per person, cooked your style
  • 1-2 slices of toast per person

Take your cooled microwaved potatoes and open the package. Remove potatoes and dice. Set aside the butter that has pooled in the bottom of the package. Slice and dice any veggies you like with your potatoes and sauté them in a skillet using a bit of the butter from the package. Add your potatoes to warm and any cooked meat if you’d like. Get everything hot and remove to a plate. Using some more butter from the package fry or scramble eggs to your liking. Serve atop the potato mixture with toast on the side.


This is an easy and quick Sunday breakfast. Customize it to your preference! I hope you try the shortcut so you can get on to other Sunday chores. Maybe a nap first though? Enjoy!
