Ground turkey and veggie flatbread pizza

Today is my 3rd and final installment of ground turkey meals. This is a great idea for Friday night pizza night using flatbreads, ground turkey, roasted veggies and tomatoes.

Ground turkey and veggie flatbread pizza – serves 2

  • 1/2 pound ground turkey, browned
  • 1 cup sautéed or roasted veggies of your choice – peppers, onions and broccoli is what I used
  • 1 can diced Italian tomatoes
  • 1/2 – 1 cup Mozzarella cheese
  • 3 flatbreads

Brown your flatbreads in a 400 oven for a few minutes to get some color and so they are sturdy enough to hold your toppings. Remove from oven and add ground turkey, veggies and cheese. On the stovetop, warm up 1 can of diced Italian tomatoes (feel free to season them if you wish by adding garlic, basil, oregano, etc.). Heat up the veggies until liquid mixture evaporates and mixture is thick. Place your assembled pizzas in the oven and cook for about 10 minutes or until browned. Remove from oven and top with tomatoes. Garnish with hot sauce, green onion and parmesan cheese.

I had some leftover veggies and just warmed them up on the side of the pan. We got 3 flatbread pizzas out of our toppings.

By keeping the tomatoes on top, your flatbread won’t get soggy. No one wants a soggy pizza. I hope you got a few meal ideas from my installment of meals using 2.5 of ground turkey. Enjoy!
