This is installment 2 of cooking once and eating 3 times. First was the lettuce cups, today is a taco crunch wrap. Who needs fast food anyway?
This is a Flatout wrap with taco seasoned turkey meat, veggies and brown rice, served with roasted sweet corn.
Ground turkey taco crunch wrap – serves 4
- 1 pound ground turkey – browned
- 2-3 cups sautéed veggies – peppers, onions, carrots, etc. whatever you like
- 1 Tbsp. taco seasoning
- 1/2 cup salsa
- 1 cup brown rice
- Tortillas or wraps of your choice
- Garnish – green onion, tomatoes, cheese, sour cream, taco sauce
Combine in skillet your turkey, veggies, taco seasoning and salsa. Heat until warm. Add a bit of water if needed. Assemble your meat and veggies in a wrap with brown rice and any garnishes. We liked cheese, green onion, tomatoes and sour cream. Wrap up like a burrito. Place in a warm, clean skillet and brown each side until crunch. Cut in half and serve with veggies. I highly recommend sweet corn as a nice contract to your spicy tacos.
I made my meal into a taco salad and the Mr.’s into the crunch wrap. We love this Steamer’s Honey Roasted Sweet corn with peppers. So easy and tasty!
Assemble with whatever taco toppings you like and wrap up tight. Heat in the skillet until crunch and you have a crunch wrap.
The crunch adds a nice bite to this meal.
I wasn’t feeling a wrap so I served mine over lettuce as a salad and it was wonderful! Enjoy!
