Oatmeal Craisins Chocolate Chip Cookies

These pretty cookies feature sweet dried cranberry craisins. I could eat these straight from the bag. This recipe was on a coupon booklet I saw, I believe. They were easy to whip up one afternoon!

I added chocolate chips to my cookies, but you could do white chocolate chips instead if you have them on hand.

Ingredients:

11 Tbsp. butter, softened (1 stick + 3 Tbsp.)
2/3 cup brown sugar
2 large eggs
1 1/2 cups old-fashioned oats
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 5-ounce package Ocean Spray® Craisins® Original Dried Cranberries
2/3 cup white or semi-sweet or milk chocolate chunks or chips

Directions:

Preheat oven to 375ºF.
Using an electric mixer, beat butter or margarine and sugar together in a medium mixing bowl until light and fluffy. Add eggs, mixing well. Combine oats, flour, baking soda and salt in a separate mixing bowl. Add to butter mixture in several additions, mixing well after each addition. Stir in dried cranberries and chocolate chunks.

Drop by rounded teaspoonfuls onto ungreased cookie sheets. Bake for 10-12 minutes or until golden brown. Cool on wire rack.

Makes approximately 2 1/2 – 3 dozen cookies.

Extreme close up of those dried cranberries. Every bit will have a dried cranberry or chocolate chip for sure. These are great to share with friends or make up some for your neighbors or surprise your mail person by leaving him/her a plate!
