Turkey Apple Panini

This is a totally cliché fall dinner and I couldn’t have been more happy with the outcome! Sliced deli turkey, thin apple slices, cheese, cinnamon and balsamic vinegar made for an excellent panini.

The cast of characters for 3 sandwiches:

  • 6 slices bread, whatever you like
  • sliced cheese – we used mozzarella
  • 1/2 lb. sliced deli turkey
  • 1/2 apple, sliced, any variety
  • sprinkle of cinnamon
  • dashes of balsamic vinegar
  • olive oil for your bread – makes it crisp on the panini maker

Lightly coat 1 side of each slice of bread with olive oil or butter. On the opposite side, layer turkey, apples, cheese, cinnamon and vinegar. Close up sandwich and grill until dark and cheese is melting. Eat right away!

If you don’t have a panini maker, just make these like a grilled cheese sandwich.

I had enough ingredients for 3 sandwiches. There were only 2 of us, but the hubs ate the leftover one for breakfast the next day.

I like to use mozzarella because it melts so fabulously. You don’t have to use so much and get a great melt. Keep the olive oil to a minimum and you have a very healthy meal. Enjoy!
