Another great ground beef recipe! (That link is where the photo below is from – I have been really bad about taking photos lately.)
This ground beef recipe uses spices to give this a Mediterranean flavor – topped with tomatoes, red onion and other fresh veggies – this was a great summer dinner. I served mine in a pita with some simple tzatziki sauce.
I also had all the ingredients on hand, so that is always a plus for me!
I made this up the evening prior to grilling them for dinner the next day. This gave the meat even longer to absorb all the spice flavors.
Mediterranean Beef Meatball Kabobs
INGREDIENTS, adapted from here – BEEF – ITS WHATS FOR DINNER
- 1 pound Ground Beef (93% lean or leaner)
- 1/4 cup dry breadcrumbs
- 1 whole egg
- 2 teaspoons dried parsley
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 4 flatbreads (such as naan, lavash or pita bread)
Mix all ingredients (except for the flatbread) together with your hands until incorporated. Roughly divide your meat into 4 sections. In each of those sections, roll 4 meatballs. Let them sit overnight or until your grill warms up. Grill on medium heat until done. Serve in a pita or on a flatbread and garnish as you wish.

I loved this simple recipe and the fact that I could make it on the grill (easy clean-up and not heating up the house) was a bonus. The leftovers also heated up nicely in the microwave. I loved the cumin in these. Enjoy!
