Continuing with another no-bake dinner idea this is a simple idea that can be whipped up using your grill and microwave. Take a bake potato and top it with grilled chicken, bacon and veggies. Easy!
Grilled loaded potatoes for two
- 2 medium potatoes
- 1/2 lb. your meat of choice – chicken, venison bacon, beef, etc.
- Various toppings: cheese, tomatoes, salsa, onions and more
Clean and pierce your tomatoes and microwave them for about 8 minutes until they are almost done, but not quite. In the meantime, grill any meat you’d like for your potato. Once your potato is cooled, cut it into 3 or 4 pieces and throw them on the grill so the cut sides are face down on the grates. Grill them to give them color on each side and continue until they are cooked through. Remove your goodies from the grill and set up an assembly line of your toppings.
I feel silly calling this a recipe because there is hardly any skill involved with this. But I thought I’d share because I know we all get in dinner ruts and don’t know what to make from time to time. Try this with different meats, veggies or even a sweet potato. Enjoy!
