Egg, ham and cheese flatbread pizza

Here is our weekly flatbread grilled pizza recipe! This was another good one and you could eat this for breakfast, lunch or dinner. Winner!

Scrambled eggs, ham, cheese, potatoes, onions and the secret ingredient? Mustard. Yep, mustard on pizza and eggs! It works though!

Egg, ham and cheese flatbread pizza for 2

  • 3 Flatout Light, Original wraps
  • 3 eggs, scrambled
  • 3 pieces of deli ham, cut up
  • 3/4 cup mozzarella cheese
  • 1 baked potato, cut into pieces
  • 3 (heaping) Tbsp. honey mustard
  • Onion slices for the grill
  • Black pepper and seasoned salt

Scramble your eggs and if you don’t have a baked potato, pop one in the microwave real quick. Set your eggs aside to cool when they are done. Lightly grill your flatbreads to firm them up. Put onion slices on the grill to cook. Bring your flatbread inside and top each with 1 Tbsp. honey mustard as the base, one scrambled egg, 1 piece of ham, 1/4 cup of cheese, 1/3 of the potato, cooked onion slices and salt and pepper. Take them back to the grill on the top rack and cook until cheese melts.

We love onions but I had to skimp on these because I burnt most of them. Fail! I have to remember our Holland burns hotter once it warms up outside!

The mustard pairs great with the ham and there is enough to just give it a little interesting bite.

Winston loves to grill. Especially if anything falls on the ground.

We like to top our pizzas with Louisiana hot sauce and some hot dried peppers from my husband’s garden that he makes. So good!
