It is the best of both worlds. A cookie in a pie. C’mon. Seriously! I have posted this recipe on this little website before (hence the picture below with green grass) but this is definitely worth being repeated. It is that good.
The sweet and creamy brown sugar base is studded with chocolate. You don’t want to miss this! I made this pie for the pie auction at the Taste of Hazen. It is so easy to make. It takes just minutes, especially with the help of a pre-made or store bought crust.
Chocolate Chip Cookie Pie adapted via the Nestle website – hey I even did use Nestle chips for this recipe !
- 1 unbaked 9-inch deep-dish pie shell (if using frozen, make sure it is thawed)
- 2 large eggs
- 1/2 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup (1 stick) butter, softened
- 1 cup (6 oz.) semi-sweet chocolate chips – I think the mini chips are best for this pie
- Sweetened whipped cream or ice cream (optional)
PREHEAT oven to 325° F.
BEAT butter in a large mixer bowl until creamy. Add sugars and incorporate until fluffy. Add eggs one at a time and beat until the mixture is soft and creamy. Add in flour and chips and mix by hand. Spoon into pie shell.
BAKE for 55 to 60 minutes or until knife inserted halfway between edge and center comes out clean. Cool on wire rack. Serve warm with whipped or iced cream, if desired.
You want the cookie base super creamy and then add in the chips and flour and mix by hand until incorporated.
Spoon into your pie crust and pop it in the oven.
A huge cookie wrapped in a pie crust. Total winner.
I think this is best served warmed and with ice cream!
Take this to your next dinner and impress your friends. Enjoy!
