Do you have family staying with you over the long holiday weekend? Or a friend not feeling well and could use a dish that he/she can eat with her family? This overnight breakfast casserole is for you.
All the breakfast essentials are included: hashbrowns, sausage, eggs and cheese!
Based on a recipe from this blog.
2 lb. bag frozen hashbrowns, thawed
1 package Jimmy Dean cooked sausage crumbles
½ onion, finely chopped
½ cup milk
2 cups shredded cheddar cheese
1 tsp. salt
¼ tsp. pepper
Top with tomatoes, onions, cheese, salsa or hot sauce.
Preheat oven to 375F degrees. Spray 13×9 baking dish with nonstick cooking spray.
In a sauté pan, cook onions and when they are about done, brown the sausage crumbles. There should be no excess grease.
In a medium bowl, whisk together eggs, milk, salt, pepper, parsley, onion powder, garlic powder and 1 cup of shredded cheese. Add the spices to your preference.
In a baking dish, spread thawed hashbrowns into bottom of dish.
Spread browned sausage on top of hashbrowns. Next, pour egg mixture on top of that.
Sprinkle the remaining cup of cheddar cheese on top.
Cover with aluminum foil and bake for about 30 minutes. Take foil off and bake for additional 10-15 minutes. (Just keep an eye on it to make sure the cheese doesn’t brown up too much). Like most casseroles, this is perfect to make the night before to have ready to bake the next morning!

Layer your hashbrowns (stick ones or square ones – it doesn’t matter), crumbles/onions, eggs and top with cheese. Cover and refrigerate overnight or until ready to bake. Let’s talk about those Jimmy Dean crumbles a minute. My Mom introduced me to these and they are such a huge timesaver and really yummy. It is fully cooked sausage and you basically just brown it up and it is ready to serve. You can find them in the freezer section at Krause’s by the other pork breakfast items. I highly endorse this product!
