Cinnamon chip cookie dip

We had a potluck at my work and because I am a weirdo, I thought I should bring a dip and an appetizer. I had no time though and few ingredients. I thought back to some cookie dip I made before. I have a cream cheese in my fridge, so this recipe was born and I loved it.

It was super quick to put together and kids would L-O-V-E it!

Cinnamon Chip Cookie Dip via and earlier recipe I posted

makes about 1 1/2 cups

1/2 cup butter

1/3 cup brown sugar

1 tsp. vanilla

1 8-ounce block of cream cheese, softened

1 cup powdered sugar

2 tsp. pumpkin pie spice

3/4 – 1 cup cinnamon chips

Melt butter in a small saucepan over medium heat. Add brown sugar and whisk until sugar dissolves and mixture starts to bubble. Set aside to cool, and whisk in vanilla.

Cream together cream cheese and powdered sugar for 60 seconds. With mixer on low speed, add in brown sugar and butter mixture. Add pumpkin pie spice. Mix until combined. Add cinnamon chips. Keep a few aside to sprinkle on top for a nice garnish.

Serve with animal crackers, graham crackers, apple slices or your finger.
