Well! This was going to be a fail recipe. Almost. I think I resurrected it with (some) dignity.
These were very good. Sometimes Mr. FeistyEats is like “where do you come up with this stuff?” Mostly, I copy recipes I find online, alter them to my needs, etc. Sometimes I just think of stuff. I am sure there are other recipes like this out there, this is my version.
In the camper no less! After we ate these, we thought these could be prepared in advance, frozen and reheated in the oven. But here is how to start them out.
Breakfast Cup ingredients:
- 12 wonton wrappers
- 5 eggs
- 2 Tbsp. milk
- 1/2 cup shredded cheese
- 1 Tbsp. butter or oil
- 2 cups total of diced green onions, green, red and yellow peppers
- 6 small breakfast sausage links diced
Directions: Have your other half grill the sausage links on the grill. This keeps the camper smelling better and you don’t have to deal with the grease. Inside, put 12 individual wonton wrappers into 12 individual non-stick muffin spots in a muffin tin. Bake at 350 until browned. Maybe about 10 minutes? I am not sure – see below for more. While those are browning, sauté your veggies in oil or butter. Once they are done, remove from heat and stir together your eggs, 1/4 cup cheese and milk. Cook in pan in a bit more oil or butter. Cook those until they JUST come together and add the veggies and diced sausage back to the mix. Spoon evenly into the 12 cups. Top with the additional shredded cheese and bake until cheese is melted.

Make some coffee for your man while he grills the sausage outside. I have no idea HOW Mr. FeistyEats got some Starbucks coffee – it isn’t exactly his hangout. He told me later he got it during a work trip when he was living in a casino for a few weeks. I knew he wouldn’t be just walking into a Starbucks and buying coffee like that otherwise.
This is nice because you can sauté your veggies in the same pan you make your eggs in.
The reason this was almost a recipe fail? (Also, yeah, use the couch when you are limited on counter space!)
Well, I don’t have a muffin tin in the camper and my home one didn’t fit in the smaller oven. Oops. I had to rotate it to brown the wontons. It ended up working out. Ha ha!
Add the veggies and meat to the eggs and combine.
Spoon the eggs into the cups and top with additional shredded cheese if you like and bake until melted.
A bit blurry, but these are baked. I sprayed the pan, but in the end, it wasn’t necessary.
These small cups pack a punch of flavor and hold up nicely.
If you are like me – DOUSE them with Louisiana hot sauce. That makes a breakfast!
