This recipe is from my friend and former co-worker, Donnette. She is a great cook. I would definitely make these again – so good!
Ingredients:
- 1 cup butter
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs
- 2/3 cup peanut butter
- 1 tsp. baking soda
- 1 tsp. salt
- 2 cups flour
- 2 cups oatmeal
Topping
- 12 oz. bag chocolate chips
- 1/2 cup powdered sugar
- 1/4 cup peanut butter
- 2-4 Tbsp. milk
Preheat oven to 350*. Cream together butter and sugars. Add eggs and peanut butter. Stir until smooth. Add remaining ingredients (excluding topping) and mix until evenly blended. Grease a 9×13 cake pan and press mixture evenly into pan. Bake for 25-30 minutes. Remove from oven, cover immediately with chocolate chips and allow chips to melt, then spread evenly. Blend together powdered sugar, peanut butter and milk until smooth. Spread topping mixture evenly over the melted chocolate chips and swirl with a butter knife to make a pattern. Cool, cut and serve!
I was surprised to see how these puffed up nicely and were very thick.
Be sure to put the chocolate chips on straight from the oven so they melt. I used dark chocolate chips, but any would work.
Top with your peanut butter glaze and swirl with a knife to make a fun pattern.
