Hello! Well, after all that sugar and cake, we probably should eat a salad, right? Again, this is more of a concept that a recipe. I am sure most all of you make tacos. Instead of putting the salad in or on a shell, put it on some lettuce. It is so good.
I think most people know I am a big fan of a burger on a salad. This is the same idea!
- 1 lb. lean ground beef
- 4 sliced green onions
- 1 caramelized white onion
- 1/2 tsp. red pepper flakes (I like it hot)
- 1/2 tsp. Lawry’s garlic salt
- 2 Tbsp. Louisiana hot sauce
- 2 Tbsp. pickled, sliced jalapenos
- 1/2 package of taco seasoning plus water called for on package
Caramelize white onion in rings, while you brown beef with onion and spices.

I only use 1/2 a package of taco seasoning. It is packed full of sodium. Add the water it calls for, jalapenos and caramelized onion while the sauce simmers and comes together.
Time to layer. Start with some cold, crispy lettuce. Pile on your hot meat mixture.
Immediately add some cheese so it melts and some fresh cilantro. <—Makes a taco great!
As my “dressing” I like to use taco sauce and just a little ranch dressing. Low-fat sour cream would work in place of the ranch as well.
Top with salsa or taco chips if you like.
Devour and pack up your leftovers for lunch tomorrow.
Drop one small piece for the beggar that woke up. How cute.
