This is a quick and easy one – great for a weekend get together or to use up some veggies quickly reaching their expiration point.
Summer corn salad (this is a guideline – it is easily customized to what you prefer)
- 4 ears of corn – boiled for about 10 minutes and cooled
- 1/4 cup of chopped green onions
- 2-3 tomatoes – seeded and diced
- 6-7 basil leaves
- 2 Tbsp. balsamic vinaigrette
- 1-2 Tbsp. olive oil
- Salt and pepper to taste
Sliced the corn off the cob into a bowl. This is such a great time for sweet summer corn. I kept stealing chunks and eating them! Crumble with your fingers. Added in chopped veggies (zucchini, cucumber, etc., anything would be good in here) and seasonings.
Combine together and refrigerate. The longest thing for this recipe was boiling the corn. This came together so fast. The vinaigrette, olive oil and simple seasonings allow the veggies to shine. Do it! This is even healthy for you – so you can eat more potato chips!
